Cold Brew Barbecue

Spring brings many things that each of us seeks, but to our inner foodie it means one thing and one thing only: the thrilling start of a new barbeque season and the chance once more to fuse smoke and heat and flame and meat into an exhilarating sum far greater than any of its elemental parts. That mission, should you choose to accept it, requires sauce and this is one of our go-tos—a thick and sweet yet savory wonder that stands up to the rigors of grilling and makes everything from burgers to portabellas taste like you’ve always dreamt they could. 

Kohana Cold Brew Barbecue Sauce


1 cup organic ketchup

3⁄4 packed cup of dark brown sugar

1⁄2 cup undiluted Kohana cold brew coffee concentrate

1⁄4 cup red wine vinegar

1 large onion, finely chopped

2 minced garlic cloves

2 tbsp. dark molasses or maple syrup

2 tbsp. dry mustard

2 tbsp. Worcestershire sauce

2 tbsp. ground cumin

2 tbsp. chili powder

Combine all of the above in a saucepan and simmer gently for 15-20 minutes. Let the results cool then puree the whole shebang in your food processor to a smooth consistency. For an extra kick, add a 1/4 cup of bourbon to the mix. Makes about 1 3/4 cups and keeps well in the fridge for up to two weeks
