From time to time you find that one unusual combination that just works. When we combined a classic fall meal with our favorite French Vanilla Kohana Coldbrew, the result was a surprisingly delicious twist to a chilly night classic.
Traditional bolognese is an Italian staple at the dinner table. Usually mixed with red wine, we traded in the booze for the brew. With coffee’s slight acidic quality and the French vanilla sweetness, the combination was a hit. The cold brew added a bold richness to the flavor and left us with a twist on there classic!
The real cold brew isn’t just for sipping! Here’s the recipe:
- 1 lb. organic grass-fed ground buffalo (or beef)
- 1/2 cup diced celery
- 1/2 cup diced white or red onion
- 1/2 cup diced carrot
- 4 tbsp butter or oil
- 1 tbsp dried oregano
- 1 tsp garlic powder
- 1 tsp red chili flakes (and more if you like it spicy!)
- 1 tsp salt
- Pinch of cinnamon
- 3 tbsp French Vanilla Kohana Cold Brew
- 2 cups tomato sauce
In a dutch oven or large saucepan, over medium heat add 1 tbsp of the butter or oil and start by browning the ground buffalo for about 5-10 minutes. Once it has been browned, transfer to a dish and set aside.
In the same pot, add 1-2 tbsp of butter and start cooking the celery, onion and carrot until lightly browned – about 5-10 minutes.
Add back in the ground buffalo and add the oregano, garlic powder, chili flakes, salt, cinnamon and French Vanilla Kohana Coldbrew. Give it all a stir to combine and then add the tomato sauce. Simmer on low for about 20-30 minutes – add salt and pepper to taste.
Finish with the remaining butter and serve over pasta of your choice and garnish with fresh basil and a good parmesan cheese!
